Ingredients

  • Large egg whites – 6 

  • Toasted hazelnuts – 1-1/2 cup

  • Confectioners’ sugar – 2-1/2 cups

  • Dash salt

  • Superfine sugar – 1/2 cup

  • Coffee buttercream 

  • Sugar – 1 cup 

  • Water – 6 tablespoons 

  • Egg yolks – 6 large 

  • Espresso powder – 4 teaspoons

  • Vanilla extract – 1 teaspoon 

  • Softened butter – 1 1/2 cups 

  • Confectioners’ sugar – 6 tablespoons

Directions

  • Take a small bowl. 
  • Place egg whites in a small bowl and let stand at room temperature for 3o minutes. 
  • Preheat the oven to 350 degrees. 
  • Place the hazelnuts and confectioners’ sugar in the food processor until the nuts are finely ground.  
  • Add salt to the egg whites and beat on medium speed until soft peaks form. 
  • Gradually add superfine sugar, 1 tablespoon at a time. Beat until the desired form.
  • Place the batter into the baking sheet using a piping bag. See that you are using parchment paper. Bake for 10 minutes and cool the cookies.
  • Combine sugar and water in a heavy saucepan and boil. Dissolve the sugar. Whisk a small amount of hot syrup into egg yolks and return to the pan. Cook until the mixture is thickened. Stir in espresso powder and vanilla; let cool completely.
  • Beat butter until it is creamy and mix with confectioners’ sugar and beat. 
  • Spread on the cookies and let them cool.
