- 225 gram sweetened shredded coconut about 2 ¼ cups, divided
- ⅔ Cup sweetened condensed milk 160ml
- 2 Teaspoon light corn syrup 10ml
- ½ Teaspoon pure vanilla extract
- hefty pinch of salt
- 225 gram dark chocolate chunks that are very finely chopped
Gather ingredients and mix them well: About three-quarters of the sweetened shredded coconut should be added to a food processor, and only enough pulses should be used to slightly break it down which should resemble coarse crumbs. Avoid over-processing the mixture since it will become too fine and the coconut fat may cause it to clump. In a small dish, combine this coconut with the remaining shredded coconut to give it a contrasting texture and set it aside.
Prepare for freezing: Dark chocolate chunks, sweetened condensed milk, corn syrup, vanilla extract, and salt are combined in a small saucepan and heated over low heat. The mixture is stirred until the chocolate is entirely melted and the liquid is smooth about 5 minutes. Add the coconut and mix everything thoroughly and keep it in the freezer for about 2 hours. Shaping the coconut mixture: Remove the mixture from the refrigerator and shape them into cylindrical logs and keep them back in the refrigerator for about 30 minutes.
Melt the dark chocolate: Take a heatproof bowl and melt the dark chocolate and make sure to stir it well.
Combine chocolate and coconut: This is the last step where you can dip the cylindrical-shaped coconut into melted dark chocolate and your dark chocolate coconut bars are ready to eat.
