  • Cherry tomatoes – 1/2 pound 

  • Drizzle olive oil

  • Pinch of salt and pepper

  • 2 10″ spinach, garlic, and pesto tortilla wraps or similar

  • Store-bought or prepared Basil Pesto – 2 tablespoons

  • Fresh mozzarella cut into 6 slices – 4 oz.

  • Good quality turkey breast – 1/4 pound


  • Preheat oven to 400 degrees F
  • Take a small bowl. 
  • Add tomatoes to it. 
  • Toss the tomatoes with a drizzle of olive oil and a pinch of salt and pepper. 
  • Place tomatoes on a small baking sheet.
  • Roast the tomatoes for 10-15 minutes until tender.
  • Spread 1 tablespoon of pesto on a wrap. Top with 3 slices of fresh mozzarella, 1/2 the turkey, and top with 1/2 the roasted tomatoes.
  • Roll up the wrap, bring the sides in, and slice in half.
  • Continue with the remaining wrap.
  • You can serve this dish with a side salad or fresh fruit.

How to prepare:

Continue pulsing several times after adding the garlic and Parmigiano-Reggiano cheese. Add olive oil while the food processor is running. A slow stream kind of adding olive oil may help in easy emulsification and it won’t help the oil to get separated from the other ingredients. Add salt and freshly ground black pepper to taste.
