2 10″ spinach, garlic, and pesto tortilla wraps or similar
Store-bought or prepared Basil Pesto – 2 tablespoons
Fresh mozzarella cut into 6 slices – 4 oz.
Good quality turkey breast – 1/4 pound
Directions
- Preheat oven to 400 degrees F
- Take a small bowl.
- Add tomatoes to it.
- Toss the tomatoes with a drizzle of olive oil and a pinch of salt and pepper.
- Place tomatoes on a small baking sheet.
- Roast the tomatoes for 10-15 minutes until tender.
- Spread 1 tablespoon of pesto on a wrap. Top with 3 slices of fresh mozzarella, 1/2 the turkey, and top with 1/2 the roasted tomatoes.
