Extra fine granulated sugar – 1 cup
Eggs – 2 nos
Milk – 1 cup
Shortening, soft – 3 tablespoons
All-purpose flour – 3 1/4 cups
Baking powder – 4 1/2 teaspoons
grated orange or lemon rind – 2 teaspoons
Salt – 1 teaspoon
Oil for frying
Powdered Sugar for tossing – 1 cup
Directions
- Take a large mixing bowl and beat the eggs intensely.
- Add orange rind, sugar, and shortening to beaten eggs and give a beat until they get mixed well. Pour milk and stir
- Once done, combine the remaining dry ingredients and blend by stirring well.
- Heat a deep saucepan to 370°F with enough oil for frying.
- Take a scooped spoon to measure the dough to get the same-sized balls. Fill the dough in it and remove it from the spoon to round it inside your palm. To ease this process, try greasing your palm with some ghee.
- Repeat this until the whole dough gets shaped out into small round balls.
- Drop the balls by heaping teaspoons into the hot oil for frying. Or, if you are an expert, you can even directly drop it from your hand. Make sure you do this step carefully to avoid accidental burning.
- Avoid adding too many balls into the frying pan simultaneously. This could make the balls congested and difficult for equal frying around the balls.
- Using a slotted spoon, give the balls a turn to make sure all sides are equally fried. Fry until the dough turns golden brown all over. This takes approximately 3 to 4 minutes of frying.
- Lift the balls from the oil and drain for a minute over the pan to drain excess oil.
- Take a platter placed with tissue or paper towels. Place the fried balls on it to drain well. Let it cool for some time.
