Ingredients (THE DOUGH)
All-Purpose Flour – 1½ cup
Sugar- 2 tsp, granulated
Salt – a pinch
Diced and unsalted butter – 110 g
Cold water- ¼ cup
- (THE FILLING)
Fresh raspberries – 9 oz (260g)
Cornstarch – 3 tbsp
Sugar- ½ cup (100 g), granulated
Apple juice – 3 tbsp (optional)
- (OTHER INGREDIENTS)
For brushing the pies: 1 egg
Directions(The dough:)
- Finely sieve the flour into a large mixing bowl.
- Add sugar and salt and mix thoroughly.
- Mash the butter with your hand into the flour and combine well until you get a crumb-like texture.
- Now, add cold water and form a dough.
- Directions(THE FILLING:)
- Take a saucepan and add all the ingredients.
- Add water and saute in a simmer and cook for 5 minutes.
- Remove all the seeds with the help of a sieve.
- Pour the mixture back into the saucepan.
- Mix the cornstarch with a little bit of water and pour it into the raspberry mixture.
- Simmer until the filling gets thickened
- Once it thickens, turn off the flame, and let the mixture cool down.
- Chill for at least 2 hours
The preparation
Roll the dough thin, and make as many circles or squares as you can with a cookie cutter.
Take one circle and place the filling in the middle, brush the edges with egg.
Place another circle of the dough over it and press the edges finely with your hand.
You can use a fork to seal the edges well.
Brush the top with a beaten egg. If you want, you can also sprinkle some crushed graham crackers over it.
Repeat until you completely use up all the dough.
Keep the oven preheated at 360°F/180°C, and bake it for 20 minutes, until golden brown.
Let the pies cool down and dust with powdered sugar. Or pour melted white chocolate over them for decoration.
