Use the buttercream to cover the sponges completely; it will avoid the sponges from getting dry when you store them. After the sponge is completely decorated with buttercream, you can store them at room temperature for up to 3 days. You can use a cake tin lined with greaseproof paper to store them safely. If you want to store them in the fridge, you can do it by leaving them unwrapped until they get frosted hard, this way you can keep them fresh for three to four days.

Cakes that are filled with whipped creams, custard, cream cheese, or fresh fruit should be kept in the refrigerator for approx one-two day. Cakes that are covered with marzipan or icing will last longer if they are placed inside an airtight tin at room temperature. To make everything simple, you just have to roll the dough into a log before wrapping it up in a cling film and freezing it.

When you’re set and ready to bake the dough, use a hot sharp knife to slice the dough into rounds from the freezer alone. Try to increase the cooking time of the dough for an extra 10 minutes and keep an eye on the while baking to make sure they are baking at the right temperature.
