Today’s recipe was inspired by… My favorite blog? A trip to a new restaurant? The latest foodie trend?
Well, no. It was inspired by a really big trip to Costco. More specifically, what do you with a boxful of greenish mangoes and an enormous pineapple? In my case, you make a really delicious Thai-inspired salad.
And this is what happens when you really love the recipe but don’t have any good photos. You go to PicMonkey and fool around for awhile. I call this one Still Life with Green Mangoes.
Thai Green Mango and Pineapple Salad
2 green or unripe mangoes (not rock hard but not yet ripe)
½ large or 1 small pineapple, peeled and cut into ½ inch chunks
2 Persian cucumbers, sliced
1 red pepper, diced
3 green onions, green part only, sliced thin
½ cup fresh cilantro, finely chopped
3 Tbs. fish sauce or soy sauce
1 Tbs. sweet chili sauce
1 Tbs. rice vinegar
3 Tbs. lime juice
1 Tbs. honey or brown sugar
Sriracha to taste (optional)
Salt to taste
- Peel the mango, and using a medium-sized or coarse grater, grate the mango flesh into a bowl.
- Add the remaining ingredients to the bowl.
- Mix the ingredients for the dressing and shake well. Pour dressing over salad and mix well. Add salt to taste. Add Sriracha, if you like.
