Cold Weather Means Spicy Food: Some Recipes To Warm You Up
Allegedly Spring is just around the corner, but the frigid temperatures and the piles of dirty snow everywhere make me a little doubtful.
But I can dream… And having a plate of spicy food from a warmer climate really helps me along. I wanted to include a little round-up of the dishes I am playing around with this week:
I started with the HEALTHY MEXICAN CASSEROLE WITH ROASTED CORN AND PEPPERS from Pinch of Yum. So warm and delicious. Definitely healthier than the usual, although maybe not when you eat up eating half of it in a single sitting. But it was so delicious….
The I traveled to the Caribbean with The Crepes of Wrath. (What a great name for a website.) Here I discovered Green Chickpea & Chicken Coconut Curry with Swiss Chard. This was a delicious recipe, and even better the next day. This was my first visit to this gorgeous site. I will definitely be back for more.
From Making Thyme for Health, I tried the Southwestern Hoppin John. The cilantro added a really nice brightness to the dish.
OK, I’m not done yet. Here are few other recipes that I have yet to try:
Tartelette — Butternut Squash and Coconut Milk Rice flavored lemongrass and lime. Yummmm…
Girl Makes Food – Vegan Jambalaya
Oh She Glows — Thai Sweet Potato Veggie Burgers with Spicy Peanut Sauce
Post Punk Kitchen – Black Eyed Pea Curry with Collard Greens and Potatoes
Maybe, by the time I finish these, spring will finally be here. One can only hope.
