You know, pancakes aren’t just for breakfast.
Though they can be a great start to the day, I eat them often as snacks and even, occasionally, for dessert.
There’s just nothing like biting into big juicy blueberries surrounded by sweet cake at any time of the day.
Blueberry pancakes are actually one of my favorite types of pancakes. They used to be my birthday breakfast every year and I’ll even go as far as saying that I’d prefer them over dessert on some days. That probably has to do with my love for blueberries, though. Those alone are my favorite fruit (and maybe even food, too).
However, even if you aren’t a total blueberry fanatic, I’m sure you’ll still love these pancake bites.
Blueberry Pancake Bites – original recipe can be found here
- 1/2 cup blueberries (fresh or frozen)
- 1/3 cup flour of choice
- 2 tbsp rolled oats
- 1/2 tsp cinnamon
- A little under 1 tsp baking powder
- pinch salt
- 1/2 tsp vanilla extract
- 1 tbsp sugar
- 1/3 cup milk of choice
Did I mention that these are also healthy?
Well, they are. Much healthier, probably, than any blueberry pancake you’ve ever had before.
Coincidentally, these pancake bites, most likely, also taste better.
