Bread pudding.

What an amazing dish.

I don’t think there is anyone who doesn’t love a good bread pudding. And I’m sure there is no one who won’t enjoy a banana chocolate chip bread pudding that you can make in the microwave. No one.

And so, ladies and gentlemen, I give you a mouth-watering single-serving banana chocolate chip bread pudding that you can make in just 5 minutes.

Oh yes, It’s true.

Ingredients

  • 1 cup cubed bread (fresh or just slightly stale)

  • 1 egg

  • 1/3 cup milk

  • 1/4 tsp vanilla extract (optional)

  • 2 to 3 tbsp sugar (be careful with the amount you use because the banana can make things sweeter)

  • Around 1/2 a banana

  • A handful chocolate chips

Directions

  • Put the bread in a relatively shallow microwave safe bowl. Whisk together the egg, milk, vanilla extract (if using), and sugar and pour over the bread, gently stirring to combine. Take the banana and microwave it for around 45 seconds, or until it turns mushy and caramelizes. Stir the banana into the bread mixture, too. Next, add chocolate chips, and spread them evenly throughout the bowl. Microwave for 1 minute, and then 30 second bursts until the bread pudding is cooked through and no longer liquidy. Serve while still warm with some chocolate chips sprinkled on top, if desired.

Who knew the perfect bowl of bread pudding was that easy to achieve.
Before this recipe, I certainly didn’t.
Now, there’s finally a quick fix for those days when you’re short on time, but have I major craving for something sweet.
